Champagne Varieties & Facts : Salon Champagne

Hi, my name is Gary Westby from K & L Wine
Merchants and I’d like to tell you a little bit about Salon champagne. This is perhaps
the most famous wine of the Cote de Blanc region, to the south of Epernay, from a village
called Le-Mesnil-sur-Oger. It’s made about half from estate vines, and about half from
purchased grapes. And the vines on average are about forty-five years old and the wine
is fermented exclusively in stainless steel. The House of Salon is the same as the House
of Delamotte and Delamotte Salon only makes Salon proper in great vintages. This 1996
is the current release, they’re going to be moving into 1997 later on in 2008. The 96
vintage was perhaps the best vintage in a generation. Some even say, one of the greatest
of, of all time. And this wine proves in the here and now that champagne can age, as it’s
twelve year old, twelve years old now in 2008 and still a baby. The owner of Salon, or rather
the manager of Salon, Didier Depond, assures me that this one should last as long as the
twenty-one, which is still drinking fabulously right now. These wines, when properly cellared,
are some of the longest lived in the world and reward ones patience fantastically if
you have the right storage for them.
